Ingredients:

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1/2 tsp ground coriander
  • 1/4 tsp chili powder (optional, for extra spice)
  • 1 can (28 oz) crushed tomatoes
  • Salt and pepper to taste
  • 4-6 large eggs
  • Fresh parsley or cilantro, chopped (for garnish)
  • Feta cheese, crumbled (optional)
  • Crusty bread (for serving)

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and red bell pepper, and sautΓ© until softened, about 5-7 minutes.
  2. Add the minced garlic, ground cumin, paprika, ground coriander, and chili powder (if using). Cook for another 1-2 minutes, until fragrant.
  3. Pour in the crushed tomatoes, and season with salt and pepper to taste. Simmer the sauce for 10-15 minutes, allowing the flavors to meld and the sauce to thicken.
  4. Using a spoon, create small wells in the sauce, and crack an egg into each well. Cover the skillet and cook until the eggs are set to your desired doneness, about 5-8 minutes.
  5. Garnish with fresh parsley or cilantro and crumbled feta cheese (if using).
  6. Serve hot with crusty bread to scoop up the delicious sauce.
