French Onion Chicken and Rice

Ingredients
  

  • 2 large chicken breasts boneless, skinless
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 large onion thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 cup shredded mozzarella or Gruyère cheese
  • 1/2 cup heavy cream optional for extra creaminess

Instructions
 

  • Caramelize Onions: In a large skillet, heat butter and olive oil over medium heat. Add sliced onions and cook for 15-20 minutes, stirring occasionally until golden and caramelized.
  • Cook Chicken: Season chicken breasts with salt, pepper, garlic powder, and thyme. Push onions to one side of the pan and sear the chicken for 3-4 minutes per side until golden brown.
  • Add Rice & Liquid: Pour in the chicken broth and stir in the rice. Cover and let simmer on low heat for 20 minutes until rice is cooked and absorbs the liquid.
  • Add Cheese: Sprinkle shredded cheese over the top and cover for a few minutes until melted.
  • Serve & Enjoy: Garnish with fresh herbs if desired and serve warm!

Notes

Substitute brown rice but increase cooking time by 10-15 minutes.
For extra flavor, deglaze onions with a splash of balsamic vinegar.
Can be made in the oven: After step 3, transfer to a baking dish and bake at 375°F (190°C) for 20 minutes.
