  • 1 lb ground beef or ground turkey
  • 4 cups potatoes peeled and diced
  • 1 cup Velveeta cheese cubed

  • 2 cloves garlic minced
  • 2 tablespoons butter
  • 1/2 cup milk

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Potatoes:

    • Boil the diced potatoes in a large pot of water until tender, about 15-20 minutes.
    • Drain the potatoes and return them to the pot.
    • Add butter, milk, salt, and pepper. Mash until smooth and creamy. Set aside.

    Cook the Vegetables and Beef:

    • In a large skillet, melt 1 tablespoon of butter over medium heat.
    • Sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
    • Add the diced carrots, peas, and corn, cooking for another 5 minutes.
    • Push the vegetables to the side and add the ground beef. Cook until browned, breaking up the meat as it cooks.

    Combine and Simmer:

    • Mix the browned meat with the vegetables in the skillet.
    • Pour in the beef broth and stir to combine. Let the mixture simmer for about 5 minutes.
    • Season with salt and pepper to taste.

    Assemble the Shepherd's Pie:

    • Transfer the meat and vegetable mixture to a baking dish, spreading it evenly.
    • Evenly distribute the cubed Velveeta cheese over the meat mixture.
    • Spoon the mashed potatoes over the top, spreading them out to cover the entire surface. Use a fork to create a decorative pattern if desired.

    Bake:

    • Place the baking dish in the preheated oven.
    • Bake for 20-25 minutes, or until the top is golden brown and the cheese is bubbly.
