  • 1 Large Pot For boiling pasta.
  • 1 Mixing bowl For combining ingredients.
  • 1 Whisk For making the dressing.

Ingredients
  

Pasta

  • 2 cups elbow macaroni Or any preferred pasta.

Corn

  • 1 cup fresh corn Grilled or canned.

Vegetables

  • 1 cup diced bell peppers Red and yellow for color.
  • 1 ripe avocado Diced.
  • 1/4 cup chopped fresh cilantro

Dressing

  • 2 limes juice
  • 3 tablespoons olive oil
  • to taste salt and pepper
  • optional chili powder or cumin For a kick.

Instructions
 

Cook the Pasta

  • Boil the elbow macaroni according to package instructions until al dente. Afterward, drain and rinse under cold water to stop the cooking process.

Prepare the Corn

  • If using fresh corn, grill the cobs until charred, then slice off the kernels. If using canned corn, drain and rinse.

Combine Ingredients

  • In a large mixing bowl, combine the pasta, corn, bell peppers, avocado, and cilantro. This mix will create a vibrant base for your salad.

Make the Dressing

  • In a separate bowl, whisk together lime juice, olive oil, salt, and pepper. Additionally, you can add chili powder or cumin for extra flavor.

Toss and Chill

  • Pour the dressing over the salad and toss gently to combine. Allow it to chill in the refrigerator for at least 30 minutes before serving. This step enhances the flavors!
