Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 2 garlic cloves minced
  • 1 cup mixed vegetables e.g., bell peppers, zucchini, carrots, chopped
  • 1 cup cooked lentils or preferred legume
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • 1 cup vegetable broth or water
  • Fresh herbs e.g., parsley or cilantro, for garnish

Instructions
 

  • Sauté Aromatics: Warm the olive oil in a non-stick pan over medium heat. Add chopped onion and garlic, cooking until they become fragrant and translucent (about 3–4 minutes).
  • Add Vegetables: Stir in the chopped mixed vegetables. Cook for another 5–6 minutes, until they start to soften.
  • Season: Add cumin, paprika, salt, and black pepper. Stir well to coat the vegetables with spices.
  • Combine Legumes: Mix in the cooked lentils (or your preferred legume). Continue cooking for 2–3 minutes to blend flavors.
  • Simmer: Pour in the vegetable broth (or water). Lower the heat and let the mixture simmer for about 5–7 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  • Finish & Garnish: Remove from heat and garnish with fresh herbs. Serve hot with your choice of side (e.g., rice, quinoa, or flatbread).

Notes

Feel free to substitute lentils with chickpeas, beans, or any protein of choice.
Adjust spices and seasonings according to personal preference.
For a heartier version, add roasted root vegetables or serve over your favorite whole grain.
