Ube Cupcakes Recipe

Ingredients
  

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup ube halaya ube jam
  • ½ cup milk
  • 1 tsp ube extract optional
  • ½ cup unsalted butter softened
  • 1 ½ cups powdered sugar
  • 2 tbsp ube halaya
  • 1 tbsp milk
  • ½ tsp ube extract optional

Instructions
 

Preheat & Prep:

  • Preheat your oven to 175°C (350°F).
  • Line a muffin tin with cupcake liners.

Mix Dry Ingredients:

  • In a bowl, whisk together flour, baking powder, and salt. Set aside.

Cream Butter & Sugar:

  • In another bowl, beat butter and sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition.

Incorporate Ube:

  • Stir in ube halaya and vanilla extract until fully combined.

Combine Wet & Dry:

  • Alternately add the dry ingredients and milk to the ube mixture, starting and ending with dry ingredients. Mix until just combined.

Bake:

  • Fill each cupcake liner ¾ full.
  • Bake for 18-20 minutes or until a toothpick inserted comes out clean.

Cool & Frost:

  • Let the cupcakes cool completely before frosting.
  • To make the frosting, beat butter and sugar until creamy, then add ube halaya and milk. Mix until smooth.

Notes

Store leftover cupcakes in an airtight container at room temperature for up to 2 days.
For a richer ube flavor, increase the amount of ube halaya in both the batter and frosting.
You can substitute ube extract with more ube halaya for a more natural taste.
