Ingredients
  

Pasta

  • 8 ounces Spaghetti Use whole wheat or gluten-free pasta.

Vegetables

  • 1 cup Bell pepper Diced (red, yellow, or green).
  • 1/2 cup Cherry tomatoes Halved.
  • 1/2 cup Olives Black or green, sliced.

Dressing

  • 1/2 cup Italian dressing Store-bought or homemade.
  • 1 tablespoon Lemon juice Freshly squeezed.
  • 1 clove Garlic Minced.

Herbs and Cheese

  • 1/4 cup Feta or mozzarella cheese Optional for creaminess.
  • 1 tablespoon Fresh basil or parsley For garnish.

Instructions
 

  • Start by bringing a large pot of salted water to a boil. Add spaghetti and cook according to package instructions, about 8-10 minutes. Drain and rinse under cold water.
  • Chop the bell pepper, halve the cherry tomatoes, and slice the olives. Add any additional veggies as desired.
  • In a small bowl, whisk together Italian dressing, lemon juice, and minced garlic.
  • In a large mixing bowl, combine cooled spaghetti, chopped vegetables, and dressing. Toss gently to combine.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  • Give the salad a quick toss before serving. Garnish with fresh herbs and enjoy cold.
